Pumpkin Creme Brulees (page 50)

This smooth and creamy custard dessert is baked with pumpkin puree. When tipped onto a dessert plate the caramelized sugar base flows over the sides. Great with sprinkles of crumbled Praline Candy on top.

3 cups milk
Yolks of 6 large eggs
½ cup sugar
1 cup pumpkin puree
½ tsp allspice
¼ cup sugar
1 cup whipping cream
3 tbsp brown sugar
24 raspberries, garnish

Preheat oven 350 degree F. Lightly grease 6 (8 oz each) custard cups with canola oil. In a large bowl whisk together the milk, egg yolks, sugar, pumpkin puree and allspice. Pour the pudding evenly into the custard cups and place in a shallow baking pan. Pour in boiling water to halfway up the side of the custard cups. Bake for 25 minutes. Remove from water and chill for 2 hours. Sprinkle an even amount of sugar on each baked custard. Use a small hand held torch to melt the sugar. Chill for 5 minutes. In a medium bowl of an electric mixer set to high speed whisk to stiff peaks the whipping cream and brown sugar. Garnish each crème brulee with the whipped cream and raspberries.
